This is a little blog of my chocolate adventures: in the kitchen and in the shops. I have a particular taste for dark chocolate bars (not truffles or filled) just pure unadulterated dark chocolate. I love tasting chocolate … just as wine lovers love detecting notes of ‘this-that-and-the-other’ from wine.
So I started this blog as a diary to share my successes and woes in the kitchen, highlight good chocolate sources in Ireland and record my tasting notes.
I live in Monkstown, Dublin with Himself (the husband, my resident critic and taster) and our HoneyB (our daughter and my trainee taster).
With the rise of artisan chocolate producers, the word cacao is reappearing. But what word should I use? Hence the name of this rambling blog; some say cocoa (koh-koh), some say cacao (ka-kow). The real name and spelling is cacao, but a typo centuries ago has given us the word cocoa. Nowadays, cacao is used to refer to the tree, pod and beans; cocoa is used to refer to the by-product of the cacao tree namely cocoa powder and cocoa butter.
