Here is a picture of a pretty dessert I got at Alexis, a new and highly commended restaurant in Dun Laoghaire. The restaurant is named after Alexis Benoit Soyer (1805 – 1858) a chef and revolutionary gastronomic writer. He was responsible for many creations: relishes, sauces, utensils, stoves. They even have a copy of one of his books, unsigned of course ;-) So we got to have a fine dinner and learn a few historical facts.
The dessert is a chocolate mousse served with raspberries in a chocolate cup (€5.50). The mousse, dark chocolate, was just the right amount, the raspberries worked well … the air cream and mint sprig, a little retro?
