I have been kept very busy with my Chocolatier course work these days. My tempering assignment is due on Tuesday and I think I am finally making progress. I made some nice chocolates only to see the next day that the back of the chocolate bloomed! I never ever realised chocolate was so fragile.

ChocONeillPacksWhich is why when I visited ChocOneill at Naas Farmers Market I was in awe of them. They have an in-depth knowledge of their materials, such a respect, everything is tempered by hand. They have some divine truffles and pralines which they are more than willing to let customers taste. It was the Single Origin bars that really wowed me. Again samples were brought out and I was taken on a journey tasting chocolate from Tanzania, Santo Domingo, Venezuela, Ecuador, Mexico …. I was in heaven.

ChocONeillVenezuelaI chose my favourite, Santo Domingo, and another one to contrast from Venezuela. The format of the bars is great … 100g divided into 10 mini bars, ideal for a quick fix or tasting. They will be ideal for my next assignment: Tasting.

HoneyB got to sample too … and I suppose her uttering ‘more choc-la’ very impolitely is a good sign. Himself was pretty impressed with the truffles and was a little annoyed that I had not bought him a bag. Next time dear.

And although Naas is out of our way, there will definitely be a next time. Mind you they have a good looking online shop too.
